Truffle Adventures with Friends!!

Sunday, we meet again!!  This has been a rough week, Madison and I have both been sick, so there hasn’t been much cooking going on, to say the least. Lots of soup and hot tea.  I am drinking some tea as I write, some yummy black tea with apple, almond and spices. While I didn’t get any new cooking in since my last post, I did see two of my best friends, Kelly and Alex last night and we made some chocolate chip cookie dough truffles!! It turned out to be quite an experience….we had so much fun!  I definitely enjoyed having company making these, it made the process so much more enjoyable.  The end product ended up being a tad sweet for my preferences, but they did turn out well and don’t look too shabby if you ask me! 🙂

I just omitted the walnuts from this recipe.  Also, to get the 1 pound dark chocolate candy coating, we combined 1 pound of dark chocolate chips with 4 tablespoons of shortening, and warmed and mixed together until nice and smooth and silky.  Then we dipped the chocolate dough balls in to get them nicely coated. Rather a messy process if you ask me, but fun too!!
